They were tickets for rides a long time ago, and an E-ticket was the ticket you used to get into the best of the rides or the most thrilling rides, so they simply use the term "an E-ticket" to describe that a ride is going to be one of the best or a thrilling ride, even though they no longer use the tickets to get on.

NOTE TO READERS: YellowMan has been known to joke around from time to time. Please don't take some posts by him to their full, literal meaning. Doing so will most likely end in one of the following: making a fool of YellowMan, making a fool of yourself, making a fool of Ronald Reagan, drymouth, or in rare cases, death. Thank you and enjoy your stay.

Disneyland used to have a ticket distribution for the attractions within its gates.

Each ticket was classified with a letter of the alphabet the letter "E" was the highest rated attraction. Letter was the lowest rated attraction.
Admission during those times were sold by ticket books each ticket book had diferent amounts of tickets for each classification. Everytime you rode an attraction a ticket had to be used. During those times most people just rode an attraction once unless yo wanted to buy more tickets in the ticket booths located throughout the park.

The tickets were eventually removed and anyone that had any left could take them back to the park and get credit for them. A complete ticket book actually has become quite a collectable.

Unfortunately my father did not know and actually took them to the park a few years back and they gave him credit for all the books he had including two complete books.
