Could you please tell me which restaurants you've eaten at (in the Park as well as hotels), and what your opinion was? A rough idea of price would be great too.

I've eaten at the Victorian Garden restaurant at the Disneyland Hotel. It is buffet service and has characters. The buffet was pretty good and had a wide range of mostly Eastern cuisine. They had sushi, curry, satay and many other selections. The desert bar was also pretty nice. However, it recall it being quite expensive at about HK$450 per person. We were there for dinner. Its been at least 3 or 4 months since I ate there, so I don't if much has changed since I was there last.
The other restaurant at the Disneyland Hotel is the Crystal Lotus. It is a traditional chinese restaurant and best done with at least 4 people in your party. I don't know the cost as I haven't eaten there. I did stop by to see the decor which is pretty amazing.
I've never eaten at the Hollywood Hotel.
In the Park, the only restaurant that serves Western food is Starliner Diner in Tomorrowland. They have hamburgers, chicken sandwiches, fried chicken, BBQ pork sandwich, fries, salads, etc. Hamburgers are good, though a little small. They aren't at all the size of In 'n Out or even a Whopper. Food there will cost you about HK$40-60 per person. This restaurant has both indoor and shaded outdoor seating.
Three restaurants in the Park have pretty much the same menu: Comet Cafe (Tomorrowland), Clopin's (Fantasyland), and Tahitian Terrace (Adventureland). They feature selections of wok, Chinese BBQ and noodle dishes. My favorite dishes are the peanut chicken or spicy shrimp dishes. Comet Cafe is only open during peak periods. Tahitian Terrace gets quite crowded right after a Lion King show, as does Clopin's after a Golden Mickey's performance. All 3 of these restaurants have only shaded outdoor seating, no air conditioning. The cost for a meal with drink at these restaurants will run you around HK$40-60 also. Each meal here comes with a free side soup/salad and hot tea.
In Fantasyland you also have the Royal Banquet Hall. RBH features grill (steak, chicken breast, satay), sushi, dim sum and curry. I love the chicken a la king served in the curry section. The chicken breat at the grill is good, but a little too small. The satay also good, but not large enough portions for most western appetities. I don't recommend the dim sum-- small portions and mass produced. Not the way good dim sum should be done. RBH has indoor and outdoor shaded (with air conditioning) seating. Again, the cost is about HK$40-60 per person. Most meals also come with the free side soup/salad and hot tea.
Adventureland's 2nd restaurant is the River View Cafe. This is a traditional chinese restaurant. Based on the number of people in your party, you select a certain number of dishes from a set menu. Everything is served family style. All seating is shaded outdoor. I don't know the cost. Again, this restaurant is best gone to with at least 4-6 people in your party. That way you can get a good number of dishes with a wide selection. I've heard the food is pretty good.
Maxims (a famous restaurant and bakery company in Hong Kong) leases space in Disneyland and runs the Plaza Inn restaurant. Great chinese food and not too bad a price either. I don't recall what we paid, just that the bill didn't scare me. The service here is impecable. All of the wait staff are senior Maxims employees who all had to try out to earn a position at this restaurant.
Last restaurant is the Main Street Corner Cafe. I haven't eaten here either. All seating is indoor. The menu is posted outside, which I hear rotates regularly. I've heard the food is good. Not sure of the cost."You sure have made a fool of yourself this time." Brer Fox

I did eat at the Main Street Corner Cafe, and it was pretty good. The menu was a mix of western and Chinese dishes--the backstory (which is actually printed on the menus) is something along the lines of how a widow was trying to keep her family restaurant open, but couldn't run it all by herself, so she hired a Chinese cook to run the kitchen, which explains the mix of western and Chinese food.
I think the Royal Banquet Hall was probably my favorite restaurant in the park. As splashtodd said, the burgers at Starliner Diner were decent, although nothing special.
I didn't eat at the Disneyland Hotel at all, but I did eat at Chef Mickey's at the Hollywood Hotel. Food wasn't bad, although I don't remember it being anything special. Of course, I went for lunch, so the show kitchens weren't going at full blast. I also picked up a salad at Hollywood & Dine, but that was more for sentimental reasons than anything else (I miss H&D at DCA).

I've booked Hollywood for October, so that part is done.
I have a child who is a finicky eater, plus, we are bringing Mother-in-law, and it's her 1st time in a Disney Resort. Hence, my anxiety about food/restaurants.
Your information has helped a great deal, plus has generated more excitement about our upcoming trip.

My Dad and I ate at the Crystal Lotus at the Disneyland Hotel. I think the food was pretty authentic and delicious but the price was kind of high.

I really would like to have decent meals but one of my children really isn't into sit down meals or Chinese food. So maybe we'll have to compromise and go to places like Corner Cafe or Royal Banquet where they have Western/Asian food. That way, Mother in law can have her Asian food too.

RBH is my favorite of all the restaurants in the Park. I like the decor inside and the food is pretty good, too.
